Showcasing a velvety mouthfeel and cupping characteristics that will have you recalling mornings from yesteryear drinking Cran-Apple juice, this mixed varietal lot from Rafael Saraceni is a knockout. Describing coffee as “the most beautiful activity I do”, Rafael is 61 years old and worked his entire life in coffee on a farm which has been in his family for the last 100 years. That farm, La Estrella, consists of 15 hectares planted with 20,000 coffee trees of Arabica, Catuai, and Typica varieties. Creativa Coffee District is a forward-looking specialty coffee producer at the Chiriquà province in Boquete, Panama. By transforming a traditional wet mill and drying patio into a modern state-of-the-art processing facility, CCD integrates art and specialty coffee in a unique and authentic space where artists are promoted and celebrated to inspire industry participants around the globe to support and demand new coffee production standards that guarantee higher incomes for growers and sustainable ecological practices for processing stations worldwide. In the Dynamic Cherry Process, coffee is laid onto the patio in thin layers for two days before beginning the fermentation process in plastic bags. This method can extend the time of processing considerably, creating extremely dense and complex flavor profiles.
