[About La Aldea] La Aldea Manor is located in the town of San Agustín in Huila Province, a well-known coffee-producing region in southwestern Colombia, and is run by the owner Wilson Ordoñez. The farm is about 1850 meters above sea level, and the farm covers an area of 15 hectares. The 15 hectares of land are jointly managed by members of the Ordoñez family, and Wilson is responsible for managing 4 of them; 2 hectares are used to grow coffee, and 1 hectare is planted with a single variety of Pink Bourbon ( Bourbon Rosado) and another hectare planted with Caturra and Castillo. The owner of the estate, Wilson Ordoñe, is a very visionary farmer! He is a pioneer in growing specialty coffee in his family, but he has never received the support of his family. It was not until he won the fourth place in the Huila Magico Competition in 2020 that Wilson's mother began to discover the charm of specialty coffee , and together plan to add 5 hectares of farmland to plant special varieties, such as Geisha and Laurina. The biggest difference between the coffee wet processing plant managed by Wilson and other manors is that the La Aldea manor will first pick out immature or overripe fruits by hand, and then wash them with water to remove pectin from the peel, and then carry out anaerobic fermentation for 12 hours , and finally dried on the greenhouse trellis greenhouse.
