About This Coffee

XO is a symbol. XO denotes quality, it denotes luxury. XO is the top shelf. Potosi XO is not too dissimilar. This coffee was a result of the Potosi farms first experiments with extended fermentation (not carbonic or anaerobic), the first lot was given a distinctive cognac taste and the name XO stuck. The Potosi farm is one of the farms that make up the impressive roster of Cafe Granja La Esperanza, sitting at 1800 masl in the Cauca Valley of Colombia. A San Juan varietal, this coffee is super boozy, funky, fermenty and juicy with a dark chocolate bonbon finish. The Sidra of Cafe Granja la Esperanza is grown at 1400 - 2000 masl, and a temperature controlled fermentation over 48 hours brings a higher concentration of sugars with intense, complex notes. The Potosi farm also holds the Yirgacheffe, and XO varieties. We have both of these. All of these coffees are good.
