This coffee from the Hortigal Estate has a balanced sweetness with a vibrant, citric acidity. Accompanied by a clear body and a complex finish, we taste notes of citrus fruits, plums and creamy white chocolate in the cup. The Horgital Estate lies between Panama's two highest peaks, the Baru volcano and the mountain Cerro La Horqueta. The volcanic soils and shade cover provided by trees creates a micro climate home to a rich diversity of birds and the perfect coffee growing conditions. The farm has been operating as a family-run operation since 1920 and is run entirely by women. The 34 and a half hectare farm lies between 1400 and 1600 metres above sea level in the Boquete Region of Panama. Typica is the only variety of coffee grown on the farm, with the trees being fertilised with "precision technology" so as to achieve an optimal harvest while remaining frugal with the use of resources. After each day of picking, the ripe cherries are taken to the processing facility, where they are washed before being dried by special drying machines, which maximise the evenness and consistency of each lot.
