The Schiavo family has been producing coffee for four generations. Originally, the family had a coffee farm in another location but struggled to produce the quality or quantity they hoped for. After moving to their current farm, Sitio Forno Grande, other farmers in the area said they would not be able to produce good coffees . With cold weather and high humidity, the community were skeptical. However, the Schiavo’s quickly proved them wrong and were producing both a good volume and quality from the farmland. The Schiavo’s have been focused on specialty coffee for the last 16 years. Eduardo Tozi, the Cup of Excellence winning producer, is a close friend and mentor and helped them to secure the necessary equipment to process their coffees . Over time, Jose’ s daughter, Jaqueline Schiavo, has begun to improve the management of their crops, harvest and post harvest production. In the future she will take over the farm and is very much devoted to the goal of producing top quality specialty Arabica coffees .
