It’s one of the most fascinating coffees we’ve ever tasted at Stow. As it grows at 2000 meters above sea level, coffee cherries ripen more slowly, creating a high concentration of sugars, lipids and organic acids. which is why a cup of coffee is extremely sweet with juicy balanced acids, delicious tropical flavors and an amazing mouthfeel. The producer of this coffee is Julian Holguin Ramos from Finca Las Nubes, who developed the natural ecosystem. The idea was to replicate a native wild growing condition of forest from east africa where this coffee comes from. Coffee is anaerobic fermented and has been dried to 11% humidity in rotated bags. The coffee in bags were rotated inside the green house to slow down the drying process. This process make coffee even more sweeter and with more flavour clarity. Enjoy this one, it really will change the way you look at coffee. In 2010, the Holguin family began their coffee journey in Valle del Cauca, Colombia. Inmaculada Coffee Farms is divided up into El Jardin, Las Nubes, Monserrat, and Inmaculada Concepcion. Inmaculada’s focus on growing exotic varieties and processing them to highlight their terroir is inspiring. Their goal is to “produce the most extraordinary coffees possible.
