Greetings to all of Costa Rica! “Where are you from, what’s for breakfast, what do you think about coffee from Costa Rica” This is a conversation we had at the Copenhagen Coffee Festival with Nicolas. It turned out that he comes from a coffee family – they grow it, and he exports it. We tried the coffees that Nico gave us – all of them were super tasty, we would love to take them all, but then you would drink Costa Rica from us until the end of the year and probably the world (it’s actually cool, but we leave it to you to choose). So we chose three lots – this is the first one. What we have here is natural processing – complex, clean, sweet. Don William is behind this delicious coffee from the Tarraz region. Full DIY and we respect it – until 2015 he sold cherries to other mills because he did not have the appropriate infrastructure for processing. But he worked, saved money, and eventually became completely independent. Since then, he has been pursuing a doctorate in coffee processing, especially natural coffee. We may not be authorized to issue diplomas (apart from the Q-grader course…), but he deserves at least a habilitation for such a well-prepared coffee!
