About 6 years ago we tasted Linarco Rodriguez’s coffee for the first time and immediately fell in love with the dense tropical flavors. He is one of the best producers in the Palestina, Huila area. The Typica variety is one of our personal favorites. It has a history of having great transparency and tight complex acidity. Linaro’s Typica is no exception. We almost booked this coffee before even cupping it because we know it would be a stunner. Huila Colombia is home to some of the most prized coffees on earth and for very good reason. Not only is the coffee education of the farmers incredibly high, but the terroir is perfectly suited to produce high quality coffees with dense flavors in the cup. Palestina is a region located in southern Huila. In this region Linarco tends to both he and his mothers farms. Once this coffee is meticulously harvested, it goes through very detailed processing. They start by resting the cherries for 12 hours after hand picking them. The cherries then get de-pulped and placed into large concrete tanks with spring water. With an open top and native yeast from the air, and on the fruit, the fermentation process begins. Here they ferment for 48 hours, then get rinsed and dried. One of the best producers in the world, one of the best varieties, and absolutely perfect terroir make this coffee in a class all its own.
