The legendary processing cooperative, Sookoo Coffee, strikes again with this fruity, clean natural. The cooperative is operated by Ture Waji, Eegata Alaga, and Fedhesa Wodessa, all members of the same extended family that have produced coffees in Guji for generations. Sookoo coffee has gained traction in producing super clean naturals, like this one, but they've got their sights on many more experiments to keep an eye out for in upcoming seasons. For this lot, cherries were laid out on raised beds for 15-21 days and were turned regularly to ensure even drying. This style of natural coffee has become a staple in our offerings - you'll find the fruit-forward profile expected in a natural Ethiopian, but with such care in processing, you'll also get an impressive amount of nuance and clarity. Florals, herbals, clean tropical and stone fruits are not out of the question in the cup.
