An interesting taste experience with mineral acidity and abundance. Red apple, cherry and strong floral aromas. Los Pinos, Huehuetenango, Guatemala, is a third-generation coffee farm owned and operated by the Vides family. It was founded in 1958 by the patriarch of the family, Jorge Vides, who was not only a doctor and a humanitarian, but also an innovative coffee conceiver. Coffee is still grown according to his values. Among other things, the farm has a school for the children of the workers and the Vides family aims to have a positive impact on their community and environment. They focus with particular precision on the protection of the surrounding ecosystem as well as the efficient use of water and the conservation of forests. Naturally, they also produce outrageously good coffee using the wet mill process and patio drying, as well as continuously developing their processes. This coffee has been washed and has undergone extended anaerobic fermentation for 48 hours.
