Coffees processed at Adado Washing Station are grown at smallholder farms throughout the Adado region in Yirgacheffe. Yirgacheffe is known for exceptional quality, and is often labeled the birthplace of arabica coffee. This has it's perks in that arabica has evolved to grow in the conditions present in the Yirgacheffe region. It is the literal perfect growing place of coffee. The Adado region is a highly sought after region for coffee buyers. Nicknamed the Misty Valley, this region produces high density coffees yielding beautiful high quality cup profiles. The Adado Cooperative owns two washing stations - where they process almost 2,500 tons of coffee a year! The natural process of this coffee starts by floating cherries to sort out lower quality, lower density cherries, and the high density coffee is then laid out in a single layer and turned every 2 hours for the first few days. This practice ensures even drying. After the first few days, the coffee finishes drying for a total of 15-20 days, depending on the weather. Once fully dried, the coffee is stored for 5-8 days to rest and is hulled (fruit is taken off) and bagged for export. This Adado is a grade 3. We taste notes of Nectarine, Orange and Berry, while there is a chewy-like note of Nougat and Marshmallow. The floral note of lavender shows up in this cup, especially while brewing. We also detect a sweet hint of apple and chocolate. This coffee shines as it cools!
