Dark Arts Coffee
Hackney, London, UK
This coffee comes from 1,753 small holders around the Geruke Mazoriya washing station in Jimma. Farmers typically have very small plots of land for growing coffee. Often having only 40 or 50 trees in and around their garden. The the cherries from these trees are carefully hand picked before being carried, usually on foot perhaps with the assistance of a donkey, to the station. There it is floated in water to grade by density and quality as well as removing the 'floaters' - underripe cherries. Following this the cherry is removed from the bean which is washed again before fermentation and finally being moved to raised beds where it will dry under supervision with regular agitation, for the next 10-14 days.
