Farm Deiro Garcia (Finca Lord Voldemort) Varietal Sidra Process Oxidated, anaerobic, thermal shock, yeast innoculated Cupping score 87.25 The Sidra variety is one of the most valued in specialty coffee for its unique sensory profile. It emerged as a natural hybrid between Bourbon and Typica, although recent research suggests a relationship with traditional Ethiopian varieties. It was identified in Ecuador, Pichincha province, and later adopted in Colombia, where it has gained recognition on artisanal farms. Sidra plants grow at high altitudes (1650–1900 m), with robust stems that can reach up to 4 m, dark green leaves, well-defined flowers and large densely grouped fruits. The beans are elongated and slender, similar to the Gesha variety. In the cup, Sidra offers a sophisticated and complex experience, with vibrant acidity (often compared to wine or fresh apple), silky body and flavors reminiscent of pear, apple, peach and jasmine, along with notes of ripe berries, honey, quince or jam. Depending on the process (washed, natural or anaerobic), caramel, cocoa, mild spices and herbs may also appear. Although its production is not massive, Sidra has stood out in international competitions, including the Cup of Excellence Ecuador 2021, where it scored over 90 SCA points. Its cultivation requires shade, well-managed systems and constant monitoring, as it is susceptible to diseases such as rust and cercospora.
