The summer season is a very exciting time for qualified coffee roasters; Fresh crop African coffees reach the European and American continents during this period and slowly begin to take their place on the shelves. As Montag, we spent June and July 2023 with the excitement of selecting the Ethiopian beans that we will use until the 2024 summer season and revealing their roasting profiles. This year, Ethiopia is another beautiful and full of surprises; So much so that it prompted us to make two changes to our classic Ethiopian strategy. This year, we are presenting you not with the traditional Montag selection (two Ethiopian coffees, one washed and one natural), but with two surprise Ethiopian coffees in addition to these options; However, we kindly ask you to wait until mid-September for these two surprise beans that have been processed "honey" and "anaerobic". (Let's give him the good news here... Montag will be meeting you again at the Istanbul Coffee Festival three years later. We are looking forward to September 15 because we will present these two beans we mentioned and many other surprises to you there for the first time). The beans and roasting profiles chosen by top quality coffee producers all over the world distinguish them from other producers and determine the identity of those brands. When we look back at ourselves as Montag and the work we have done since 2015, we see, for example, that we are always pursuing a certain washed Ethiopian profile and a certain natural Ethiopian profile; We select and roast the beans according to the ideal we set in our minds. Based on this determination, starting from this year, we decided to bring you the washed and natural Ethiopian beans that we offer throughout the year, under the same name: PINK SUNRISE (washed process) and FUNKY BERRY (natural process). We first used the name FUNKY BERRY on a natural Ethiopian coffee we supplied from Nordic Approach in 2019. Our aim was to give the seed the name it deserves, as it contains strong fermented fruit flavors with extremely high mouthfeel. Over the years, we have tried to achieve the same profile in natural Ethiopian coffee selections, and this year we are here again with a similar bean. The coffee producing village named Keramo is connected to the city of Bensa in the Sidama region. The most striking feature of the village is that it is located at an extremely high altitude (2300m); This height gives the coffee its own, extremely complex character. Especially since coffee berries take longer to ripen than other regions (harvest begins in December rather than November), the flavor profile takes on a “funky” character (wildly strong, winey, and very sweet at the same time). A strong but clean / bright / complex natural Ethiopian coffee experience. What more could you want!
