The Nunes family coffee estate is composed of three farms; Bom Jardim, ChapadĂŁo, and Freitas. Combined the farms make up 620 hectares of land in the PatrocĂnio growing region of Brazil. Over 70% of the economy in PatrocĂ®nio is tied to coffee production. The region became vital for coffee growing in the 1970s when late season frosts eliminated coffee on large plantations in the bigger regions of SĂŁo Paulo and ParanĂŁ. PatrocĂnio's elevation and more consistent seasons with less rainfall during the harvest, which can knock cherries off the trees, all make for great coffee producing conditions. Osmar Nunes Sr. began the families' work on the land by cattle farming. In 1984, Osmar Jr. planted the first coffee trees on only 10 hectares of land. Over the last four decades more resources and land has been dedicated to coffee, now totaling 480 hectares over the three farms. A wet mill and quality lab have been built on the Bom Jardim farm. Today Osmar Jr's son, Gabriel, who has a degree in agronomy manages the operations on the farm with a focus on high quality. The Nunes estate has won recognition in regional competitions, the Brazil cup of excellence, and all three farms are Rainforest Alliance, UTZ, and 4C certified. Achieving and maintaining these certifications requires a focus on sustainability, social, and economic standards. This is a fully washed process Brazil and the high quality shows in every brew. Dial into cocoa nib, hazlenut and toffee by starting with a 1:16 brew ratio, filtered water at 208-210℉, a medium-coarse grind, and a 3.5-4 minute brew cycle.
