Loma Pacha Farm is a small-scale farm that grows a variety of coffee varieties. Loma Pacha is located in Chalatenango, in the Alotepec Metapan region of northwestern El Salvador, at an altitude of 1,200 to 1,800 meters. This is a historic farm that has been growing coffee for 25 years, and although the farm is about 2 hectares, it grows a variety of coffee varieties, including Bourbon, Pacas, and Pacamara. A sweet aftertaste reminiscent of milk chocolate from the Pacas variety, which is closely associated with El Salvador. The Pacas variety is a coffee variety that was discovered in El Salvador and is closely associated with this country. It was discovered in 1949 on the farm of the Pacas family in the Santa Ana region of El Salvador, and the name was given to it. Genetically, it is a variant of the Bourbon variety, and exhibits dwarf characteristics in which the coffee matures at a small height. This allows farms to plant densely, which has the advantage of increasing harvest efficiency per plot. In the production process, ripe cherries of the Pacas variety are picked and dry-fermented for 16-20 hours, then the cherries are spread on raised beds and dried for approximately 14-18 days, depending on the weather. You can enjoy sweet fruit flavors like berries and apricots that are typical of natural processes, and a sweet aftertaste reminiscent of milk chocolate.
