Fazenda Sertão is a small, multi-generation farm in the acclaimed Carmo de Minas micro-region of Mina Gerais. There, in the high altitude and rich soil, Francisco Isidro Pereira and his brothers grow high-quality, low-acidity coffees. This Yellow Bourbon, a hybrid varietal discovered nearby in the late 1800s, is spread on the patio for 72 hours, gently drying in its fruit to maintain complexity and terroir. The flavors are further magnified because they are rare peaberries, occurring when just one bean grows per cherry and receives all the nutrients.
