Chang Rai is made up of 300+ households, each producing around 1-2 tons of cherries. This household belong to the Akha Hilltribe which sits at an elevation of 1200-1500 meters above sea level. Each year they improve their family mills to ensure they are harvesting the best coffee possible. The cherries are collected, floated to remove defective cherries, and then pulped in a way to preserve the mucilage in the cherry. This is done to preserve every bit of flavor possible in each bean. They are then dried on raised beds and raked often to ensure they are dried evenly. Once the cherries are dried to a 10% moisture level, they are transported to a dry mill to be checked for rocks, hand sorted one last time, and bagged for shipping.
