A very unique flavour profile from a rare variëty. This coffee is produced by Deiro Garcia, one of the most innovative growers in Huila. His farm is located in Pitalita, a Colombian municipality located in the southeast of the department of Huila in the Magdalena valley. This municipality carries out about 18,000 coffee growing families. Since Deiro Garcia is a great fan of Harry Potter, he gave his farm a name that will surprise you for sure… Lord Voldemort. Not only the name is crazy, also his approach to coffee fermentation is. Experimental Washed For this washed process only perfectly ripe beans of the exclusive wush wush variety are anaerobic fermented in bags for 40 hours, at an average temperature of 16 to 18°C. The coffee is transferred to pulping tanks for 20 hours of oxidation. The remnants from the coffee cherry are collected for the next step which is a fermentation at a temperature of 39°C for 12 hours. To stop the fermentation at the exact preferred stage a thermal shock is performed. This means that the coffee is washed at a temperature of 65-70 degrees to stop the fermentation process. The coffee is then dried in about 18 to 24 days at a maximum temperature of 30 degrees Celsius. Complex profile The result is amazing! The beauty of this coffee lies in the distinct and pronounced profile. The flavours you find in our profile are more common in coffee descriptions but this time it is just amazingly true! You start with that perfumed smell, then you take your first sip and taste those almost artificial perfumed florals, followed by lemongrass and then, when it cools down you find yourself with an everlasting finish of straight up ginger.
