The Café Caron, signature taste of the House, is a blend of 4 Grands Crus of Arabica. Cultivated at altitude on exceptional terroirs, the coffees that compose it come from selective picking, then are sorted by hand to preserve the most beautiful cherries. This Café Caron Signature is made from 4 origins of coffee: - Huehuetenango from Guatemala which gives it strength and character. Its notes of chocolate and hazelnuts typical of Huehuetenango contribute to the structure of our Signature Blend. - The El Capitan from Nicaragua, a note of acidity. It perfectly describes the chocolatey character and typical roundness of Central America. - The Brazil of the Cerrado Region, the general balance. It allows the expression of gluttony in the blend, with a real chocolate note and a slight note of tropical fruits which brings sweetness to the drink. - Mocha Sidamo from Ethiopia, roundness and length in the mouth. This coffee is the final touch of the blend, bringing a very pleasant and characteristic delicate and apricot note. Depending on the harvest, the blend of the four crus may vary in order to maintain the same balance and the remarkable taste of Café Caron. The "monk's robe" cooking profile of Caron coffee allows the freshly roasted beans to develop an extraordinary aromatic complexity. During roasting, the blend of these Arabica grand crus develops aromas, where tangy notes meet and exalt scents of cocoa flower. In the cup, slightly acidulous notes reveal aromas of brioche, caramel and chocolate.
