This means that the green beans are exposed to humid monsoon winds. The "monsoon-ripened" coffees are stored in special warehouses until the monsoon season begins. The sides of these warehouses are opened so that the moist monsoon winds flow around the coffee, causing it to swell and giving it a softened but intense and musty aroma and flavour.
