In the cupping in which we chose Tolima Especial, we were really impressed with its sweet, clear flavor while maintaining the creamy body we love. These are the impressive qualities of coffees we source from higher elevations. The beans that comprise the Tolima Especial lot were grown between 1510 and 2100M above sea level. We tasted notes of chocolate, nougat and stone fruit. Our current producer the Asprasar co-op in South East Tolima. Asprasar was created in 2016 by about 100 men and women farmers, with the goal of increasing their quality of life through earning higher prices for their coffees. Asprasar is committed to preserving the environment for future generations and has achieved an impressive number of certifications: organic, NOP, EU, Jas, FLO, Rainforest Alliance, UTZ, and Manos de Mujer. This lot was produced between 1,500 to 2,100 meters above sea level with rich soil that allows for the optimal production of coffee. It is made up of Caturra, Castillo varieties, and is certified Organic and Fair Trade. The coffee underwent 12 hours of fermentation and dried for 10 to 20 days depending on the farm.
