This is an unwashed coffee, also known as natural processed. From the Yirgalem region in Southern Ethiopia, these beans are grown at a high altitude of over 2,000 meters. The "natural" method requires a slower drying process, where the beans are left inside the cherry and dried by the sun. The cherries dry like raisins and turn dark. This allows the fruit to have an impact on the coffee adding flavorful complexities to the final bean. In addition this coffee comes certified as Rainforest Alliance, UTZ and organic.
