This coffee was roasted exclusively for 2025 season subscribers on May 5, 2025. The fifth coffee of our 2025 season continues this year's exploration of non-Panamanian Geshas and comes to us from the producer of one of Aviary's first releases: Maria Nieves. Like Nancy Mendoza, Maria planted Gesha seeds that came to Peru via Costa Rica in an effort to improve her family's prosperity through the cultivation of high-quality specialty coffee. My name is Maria Nieves Tantalean Fernandez, I am 46 years old and I live in the village of Barro Negro, La Coipa district, San Ignacio province, Cajamarca region. I am a producer member of the Alpes Andinos association and I have my farm El Limon, where I grow varieties such as Caturra, Bourbon, Catimor, and the El Chinchin farm, where I only harvest Gesha. Over time, I have acquired knowledge in the cultivation and quality improvement of the coffees I produce, working hard on a more selective harvest and fermenting it for more days to achieve better results. My goal is to be recognized as a producer of high-quality coffees in the region and nationally. I also want customers to feel happy when they drink my coffee. I carry out the entire process with my husband, who supports me with the farm work. I have two children who are in school, and we make a living from farming. I am growing a new plot of land in the hamlet of La Lima, which is further from the town where I live. It's a place where the climatic conditions and altitude are perfect for producing quality coffee. We have two hectares of freshly grown coffee there, and we work hard to continue producing very good quality coffee. Our main economic activity is coffee, which is why we make a living from it. Maria Nieves Tantalean Fernandez Gesha grown at 1850 masl using organic methods by Maria Nieves at El Chinchin in Barro Negro, Cajamarca, Peru; selectively hand-picked and sorted in September 2024; fermented in cherry for 12 hours; pulped and floated; fermented in tile tanks under water for 24 hours; washed; dried on raised beds under shade for 20-25 days; exported through ASPROCAFE; imported by Yellow Rooster This coffee was exported through the cooperative that Maria leads, Alpes Andinos, which provided warehousing and milling as well as export services for her coffee.
