This washed coffee from PNG displays a charming balance between a caramel sweetness and a gentle, red grape acidity. The body is clean, and leaves a pleasant and sweet aftertaste. This coffee was grown by small holding farmers from the Wahgi Valley in the north of PNG, each with about 2,500 coffee trees on their one-and-a-half hectare plots. They sell their harvest to centralised mills, where the cherries are sorted, depulped, and then dry fermented for 24 hours. They are then washed, removing all the mucilage and parchment from the beans which are finally dried out for tree to six days until they reach the desired moisture content, when they can be sacked up and shipped.
