Discover the parent species the mother of Coffea Arabica coffee and the coffee which won the first three places on World Barista Championship 2021 and first place on World Brewers Cup 2021. Coffea Eugenioides is a unique ancestor and one of the parents of Arabica. It is a medium-sized tree with small narrow leaves, which bears only 150 grams of fruit per season. This extremely rare coffee is 3 times sweeter than any variety of Arabica and has about half as much caffeine. Coffea Eugenioides thrives in Colombia at 2,000 meters above sea level in the far eastern Andes, where Julian Ramos developed a natural ecosystem. The idea was to replicate the indigenous state of the wild-growing forest of Africa, where this coffee also comes from. The special feature of the Finca Las Nubes estate is that the coffee cherries ripen more slowly there, which creates a high concentration of sugars, lipids, and organic acids. Coffee is harvested at full-sugar maturity, placed in airtight stainless steel barrels, filled with carbon dioxide, and macerated for 6 days. This allows the coffee cherries to break down different levels of pectin. This is followed by 22 days of parabolic drying up to 11% humidity, which gives the coffee even more sweetness, fruitiness, and greater clarity of taste. In 2010, the Holguin family began their coffee journey in Valle del Cauca, Colombia. Inmaculada Coffee Farms is divided up into El Jardin, Las Nubes, Monserrat, and Inmaculada Concepcion. Inmaculada’s focus on growing exotic varieties and processing them to highlight their terroir is inspiring. Their goal is to “produce the most extraordinary coffees possible.
