El Salvador Los Pirineos - Elite Bourbon is a washed, special bourbon varietal coffee. The varietal is called “Elite,” as a tribute to the 90-year-old Bourbon trees on Diego’s farm, a name given by his father to honor their heritage. They were named this due to the coffee plants’ closeness in lineage and genetics to the very original Bourbon trees on Reunion Island off the coast of Madagascar. This particular Bourbon lot underwent a Washed processing method. After being freshly harvested, the cherries were pulped using water to remove the fruit from the parchment layer. The washed beans were then spread over shaded, raised beds, where they dried for 45 days until reaching their optimal humidity level. Look for notes of Black Cherry, lime and molasses in this cup, nicely balanced in sweetness and depth, with a rich mouthfeel and pleasant finish of sweet fruits.
