About This Coffee
This is our second year purchasing from Israel Ramirez and his farm, La Hachazon. Israel is the de facto leader of a producer group in his community of Selguapa, which invested in communal drying beds, a Penagos ecopulper and an emergency fund for its members. Israel also has his own beneficio where he processes his coffee to exacting standards. Typica coffee grown using organic methods at 1750 masl; selectively hand-picked and sorted for ripeness; floated; pulped using a Penagos eco-pulper; fermented dry in tile tanks for 30-38 hours; washed; dried on raised beds in solar driers for 25 days.
