Las Moritas had humble beginnings as a tiny one hectare (2.5 acre) farm that grew tomatoes, beans and corn. Over 30 years ago, Don Higinio and his wife Doña Aura purchased this small farm and planted their first bourbón varietal coffee seeds, handed down from Don’s father. Every year, they acquired more land and continued to grow Las Moritas into the successful coffee farm it is today. The land that makes up the Las Moritas farm is quite diverse. It ranges from planes to hills to mountains to cliffs. The soil is different in each of these areas, which was influenced by the crop that was previously planted there. They also plant dozens of varieties throughout the farm. This is a single-variety red pacamara lot, which gets its name from the red skin of the coffee cherry on this pacamara coffee plant. We chose this particular lot because of its beautifully complex cup characteristics that made our mouths drop open in awe. Like many other pacamara varietal coffees, this coffee has a distinct softness to it while maintaining beautiful complexities. We taste creamy melon with the surprisingly floral vanilla rounded out with a pleasant and full brown sugar sweetness. It’s simply delightful!
