Borealis Coffee Company
Pawtucket, RI, USA
It sure has been a while since we dipped our cupping spoons into a Papua New Guinea (PNG) coffee. Coming from the Riverside Mill out of the Eastern Highlands really caught our eye and maybe you can guess why *wink wink, nudge nudge.* We were lucky to find that not only did the mill share the namesake of our cafe's home town but they also produce some exceptional coffees. Moses Venapo works with 50 or so smallholder farms around his village and neighboring villages and has his mill set up just in his backyard. Rather than buying coffee in its parchment (after processing) he buys cherries directly from farmers at a premium putting more money in the farmers pockets. Because of this he is able to maintain control over the purchasing and processing while providing farmers with feedback about best practices in their picking.
