Usually each coffee fruit consists of two grains, but 5% of the world’s coffee is born as an only child. These, called Moca, have more uniform roasting due to their rounded shape, which allows the roll of grains by the roaster cylinder more efficiently, facilitating the transfer of heat in the roast process.
