About This Coffee
Coffee is a fruit that can be processed in its entire form (Natural), without its skin, pulp and mucilage (Despolpado Cherry) and without its skin, keeping the pulp and mucilage (Honey Process). The process of obtaining the Honey Process goes through the coffee washing phase, where the ripe coffees (cherries) and green coffees are separated from the "float" coffees (past maturation). The "float" coffee has this name because it does not sink when placed in water. Then the green coffee is separated from the cherry using the peeler. It is known that in the mature stage, the peeling of the fruit occurs more easily, unlike green coffee, in which the skin is strongly adhered to the fruit, requiring greater force to remove the skin. After removing the skin, we keep the mucilage and pulp in the coffee bean and then take it to the suspended terrace. This process guarantees coffees at the best stage of maturation with high quality in the drink.
