Gedeb is located in the Gedeo district of the Southern Nations and National Peoples in Ethiopia. Coffee farmers in Gedeb are small landowners who have only a few hectares of land. Farmers in this area have plants at altitudes ranging from 1,945 to 2,100 metres above sea level. The small river that provides the fermentation allows the coffee berries to ferment perfectly in about 36-48 hours. During the harvest, fully ripe coffee berries are processed. The fully ripe berries, usually within 8 hours after harvest, are puld to separate the flesh from the bean. Then the coffee is fermented for about 36-48 hours and then washed. Then the berries in the sun are dried on raised beds with shade. It is sorted until the moisture content reaches 12 percent.
