Our newest offering from the folks at Catalyst Trade is no exception — this fully washed, organic offering comes from multiple sites in the Guji region; the result of years of 'boots on the ground' work from the sourcing team at Catalyst. Purchasing as many lots as possible, without compromising on quality, gives Ethiopian producers long-term security and the peace of mind to focus on production. With a strong peach-forward flavor, sparkling with hints of lemon and lilacs, this single origin tastes like long, lazy summer days lingering into fall. Tastes delicious brewed hot, or made into cold brew. Catalyst shares the inspiration behind the name: "Yirgacheffe is loosely translated “land of abundant springs”, and is a region flowing in clean water and washed by pure rains. In acknowledgment of the deep-seated rituals of the Ethiopian tradition, and the way that washed Ethiopian coffee continues to be the holy spring around which we coffee professionals gather to celebrate our own kind of sacrament, we have named our washed community lots “Tsebel”, or “Holy Water”.
