There was a single word that escaped the lips of the slack-jawed Cool Hand team members that sat and contemplated the coffee from our new farming partner. “Gosh” left our lips as the final breath leads you into the great beyond. The difference being that we remained on this astral plane, jovial and excited as the sweet balanced flavour sat with us for the next half an hour. We looked to the heavens, the way one looks for some great answer to life’s miracles. There, in the haze, gliding down to us for our salvation was Sara Gutierrez. Sara Gutierrez is taking Colombia into the future of coffee production. Hailing from Buenavista in the heart of Colombia, she comes from a long line of coffee growers. She has adapted her processes in new ways, constantly searching for a more sustainable way of farming. Starting from the soil, she uses non abrasive pruning methods and adaptive shade to help her crops allowing an agricultural practice that is free of chemicals and herbicides. For pollination, she uses bees that she houses on site in a way to allow more natural growing. In fermentation she is ahead of the curb, experimenting with new methods that allow a better level of control and ultimately more in depth sensory profiles. We are blown away by Sara and hope to continue to learn and work with her long into the future. With deep flavours of stone fruits like cherry and plum both on the nose and the palate and a smooth vanilla finish, GOSH sits playfully on your mouth with beautiful sweetness and a crips clean finish.
