The Bookkisa filter roast tastes very flowery and is reminiscent of the sweetness of jasmine and elderflower. At the same time, the coffee has fresh, sparkling notes of white currant. A pleasure for all senses! The Microlots bean comes from Ture Waji. Sookoo Coffee is the name of his family-run business, which Ture operates in the mountains of the Guji Zone in the Odo Shakisso District in southern Ethiopia. Our new partner Osito Coffee has made it possible for us to include this coffee from Ture Waji in our range and to roast it for you. Sookoo Coffee produces high quality organic and specialty coffee and works with many small farms in the village of Daanisa. The village's name comes from the local term for an umbrella-shaped native tree. The Daanisa tree has medicinal properties and is used for a wide range of construction purposes. Most importantly, it is used as a natural shade provider for the region's coffee trees. However, the Guji Zone also receives plenty of rainfall and is characterized by steep, mountainous terrain. Perfect conditions for the great variety of coffee varieties found here, which grow at over 2000 meters. Guji coffee has only recently differentiated itself from the neighboring growing areas of Sidamo and Yirgacheffe. Due to its immense quality and unique profile, it is gaining more and more international recognition. The washing station Dambi Uddo, which is connected to Ture Wajis Farm, selects the qualities of the coffee. Naturally prepared coffees, like our Bookkisa, are first rinsed in water to remove underweight or damaged beans and other impurities. Only the cherries that go down are accepted for the higher grades. The floating cherries are set aside to be processed as lower grades. Experiment a little with the grammage and the throughput times so that this coffee can fully develop its taste, depending on the nature of the water you use for brewing.
