About This Coffee
Our last Peru release of the season comes from Efrain Carhuallocllo and his famed El Cerro Gesha plot. This was one of our most popular coffees last year, and we are happy to report another great cup profile this year. It is very dynamic, showing juicy/creamy tropical notes upfront, leading into sweet florals and a slightly earthy, tea-like finish. This cup is full of complexities to explore. Orange creamsicle, honeysuckle, rooibos. Acidity: citrus, tropical Sweetness: honeyed, creamy Balance: leans floral Finish: highly floral, red tea Rest: 40+ days recommended Filter eval day 1: Gabi Standard - Wonderfully complex, more subtle on day 1 compared to the other Peru lots, wonderful florals into finish with a further complex red tea note. TDS: 1.39 EY: 23.09% Filter eval day 3: Graycano Sibarist fast 16:250 - Orange creamsicle, tangerine, yellow and orange tropical fruits are more prominent in this cup and very clean. Creamy, slightly marshmallow sweetness into floral finish. Slight floral linger. Much less of the tea-like presentation of the Gabi Standard brew. TDS: 1.4 EY: 18.89% We use 60 hardness, 20 buffer water heated to 198F in all of our recipes.
