This time, we tried to explore coffee from Gunung Halu with experimental processes - extended yeast cherry fermentation. Coffee from this region always intrigues us to its potentials. We have been experimenting with a lot of different process - natural, honey, full wash, roast it with filter profile, espresso profile, blend it with another coffee and now, we tried to extend the fermentation just like the famous "Wine Coffee." The result is very satisfying, coffee that has complex layered fruitiness, rounded body with almost no bitterness. Funky coffee with quality. For those who are a fan of a naturally sweet coffee, this coffee is perfectly suited for you.
