This batch of coffee is produced by Nestor Lasso, in the El Diviso farm. It is one of the most famous farms for the production of quality coffee in Colombia. We are located in the municipality of Pitalito, in the Hulia region. The farm covers more than 18 hectares, almost exclusively cultivated with coffee with a wide range of varieties used. Nestor Lasso is the third generation of coffee farmers, always directed towards the modernization of production technologies to achieve quality excellence and improve the social conditions of the people who collaborate in the farm. Coffee cherries are harvested by hand and selected according to their degree of ripeness. They are then closed in airtight jars where they undergo an oxidation process in which it lasts about 48h. At the end of this first fermentation the cherries are selected by “ floating ” or separation by floating. The first processing ends with a washing of cherries with water at 50 ° C. The next step sees green coffee subjected to an anaerobic fermentation of 80h to 35 ° C with the addition of selected yeasts. (saccharomyces cerevisiae yeast type T58, often used in the preparation of beer). The drying process is carried out in two stages: the first in mechanical drum dryers (12h), the second step takes place on raised beds for a period of about 15 days.
