About This Coffee

Norma Iris Fiallos' farm San Rafael is located in Los Limos area of Corquin, Copan. It is nestled among a pine forest with highly acidic soils contributing to a very particular cup profiles of the coffee grown there. The coffee is completely shade grown and the production area represents a fraction of the total land. Cherries from many varieties are picked and processed separately. This year we celebrate the return of the wonderful Parainema varietal, this time processed using a macerated natural method. The cherries were first macerated in barrels under controlled conditions for 48 hours before being slowly dried on raised beds. Parainema is a hybrid varietal developed by the Honduran Coffee Institute of a Sarchimor cross between Villa Sarchi and East Timor hybrid. We are very excited by the juiciness and bright fruity notes in this cup. We love Norma's coffee and with its flavour note reminding us of Christmas cake, candied fruits and cassis, this lot is the perfect fit of this year's festive brew!
