This coffee is produced by the Dula Mazoria washing station, located 2200 meters in the Banko Chelchele Kebele in the Woreda of Gedeb, Ethiopia. The station employs 15 staff full-time the year round and 40-50 additional workers during the production months between November and January. Coffee in this area is cultivated under the canopy of native shade trees, and cherry is selectively hand-picked. On delivery to the washing station, coffee is pulped, washed, and sun-dried on raised beds for 12-15 days. During the hottest part of the day, it is covered to preserve moisture and covered again overnight to protect it from rainfall. On the beds, the coffee is raked continually to ensure even drying. Finally, the coffee is stored in Jute and transported to the Siz Agro dry mill in Addis Ababa, where it is hulled, destoned, screened, and colour sorted.
