The amarelo, meaning yellow, tastes somewhat sweeter than its neighbouring brother the Catuai vermelho, meaning red. Just think about eating a little tomato , the yellow ones taste a bit sweeter than the red ones, right?! Just like the tomatoes the flesh of the yellow coffee cherrie has just a bit more sugars, this means that the beans inside can enjoy al that sweetness while growing and developping into a beautifull coffee bean. This results in a naturally balanced, sweeter coffee.
