This coffee comes from coffee growers Johanna and Heiner Lazo who own and operate Finca El Rubi in Antioquia, Colombia. When they purchased the farm, it was mostly planted in Caturra and Castillo varietals. The Lazo family have since added Papayo, Pink Bourbon, and SL28 varietals to their line-up. This particular lot is a Pink Bourbon that boasts a silky/plump body and crisp/sweet tart acidity with notes of papaya, pink grapefruit, and honey. The Lazo family works with a group called Agacafe to mix their fertilizers which are a combination of organic material, phosphoric rocks, and dolomites (a type of limestone that provides valuable nutrients to plants and affects the pH of the soil). This fertilizer restores their soil, nurtures their plants, and is an example of the attention to detail the Lazo family pay to producing unique and exemplary coffees.
