It’s back! A minimal fermentation washed process Geisha from El Paraiso. An earlier batch from the 2023 spring season won first place in the innovation category at the 2023 Coffee Collection festival in Tokyo. The coffee cherries are first pulped to remove the mucilage and quickly cooled to minimize any fermentation activity. The mixture is then put in a rotating tank and undergoes a proprietary, yet simple and elegant, process to halt fermentation, increase contact between coffee and mucilage, and maximize the absorption of mucilage into the internal structure of the coffee seed. The result is a coffee processed with the intent of maintaining the original coffee cherry pulp character in the cup.
