BACKGROUND Don Héctor is a seasoned coffee producer from northern El Salvador, near the border with Honduras. His farm, situated in the La Montañita area of the Chalatenango region at elevations exceeding 1,900 meters above sea level. This area experiences significant temperature fluctuations – hot and dry during the day, with nighttime temperatures often nearing freezing. Such conditions stress the coffee trees, enhancing the quality of the beans and resulting in a unique cup profile. The Pacas variety, which Don Héctor cultivates, is a natural mutation of Bourbon, first discovered in 1949 on the Pacas family farm in the Santa Ana region of El Salvador. Despite its susceptibility to coffee rust, Pacas remains widely cultivated in El Salvador, accounting for 25% of the country's total coffee production due to its strong yield potential and high cup quality.
