Our single estate (SE) Rancho San Francisco from Chiapas, Mexico has been a cornerstone of our offerings from day one. It’s a great everyday coffee, bold with a medium body and notes of brown sugar, oak and spice. In the cup there is good acidity and a lingering but not overpowering brightness. It is a well balanced offering comparable to but bolder than many coffees produced in Guatemala. Brothers Delmar and Fernando Guillen grow a mixture of Caturra, Catuai, Typica specialty grade varietals. At 1200m elevation, the 370 acre family estate fulfills the criteria necessary to classify it as a Strictly High Grown (SHG) Central American coffee. It is washed, sun-dried and organically grown without chemical fertilizers or pesticides. The Chiapas region is well suited for growing specialty grade arabica coffee, but often it is shunned by North American roasters, making the Rancho San Francisco perhaps one of the most underrated and under-valued coffees in Central America. While it is an extremely versatile coffee for balancing a specialized blend, it stands alone as strong, single origin coffee.
