We love the collaboration and experimentation coming from these two brothers. We're always jumping on google hangouts to plan, update, and see all the progress happening in and around the coffee farms. Elias & Shady started to work with experimental coffee in a way that they could create and pass through the technology that would help to improve the quality of life of the families that work together with them in their project el Vergel. El Vergel is located in the beautiful Department of Tolima, spanning across the mountains in Colombia. Colombia boasts 11 different altitudes, each containing a unique flavor palate, that is unrivaled anywhere else in the world. It's on an inactive volcano that has created some of the most nutrient rich soil for planting. Each and every green coffee is single-origin, hand-picked, and carefully inspected by one of their tenured pickers. They go through great lengths to only produce the finest yields for us to roast. This series of specialty coffee contains a wide variety of coffees produced all around Colombian coffee regions by the members of The Colombian Coffee Club, which is helping them through processing techniques, quality control systems, and a higher income for their hard work. We're paying a premium of $1 per pound more to ensure the families are well taken care of and provided for in meaningful ways. This coffee is processed with the traditional washed process, with the fermentation of 12 to 24 hours in mucilage, dried in the sun on patios for 10 to 15 days.
