About This Coffee

This is our fourth year now working with this cooperative. Each year, we've been so intrigued by such a clean, sweet and complex offering. The Keto Tapasi Progress Association was founded in 2008 and consists of about 375 members who come from diverse cultural and linguistic backgrounds. They collaborate to produce the consistently great lots we cup each year. They have been Fair Trade Certified since 2011 and Certified Organic since 2014. Most of the farms in this association are small, and are actually called coffee "gardens"; no formal farm names and no real boundaries exist between one owner's property and their neighbors'. Upon harvest, the cherry is depulped, then fermented dry for one to three days. It is then washed and laid to dry for 3-4 more days. Parchment is then delivered to the central mill where it is sorted for quality. This attention to detail yields great results! In the cup, we noted flavors of praline, caramel, and lemon with a juicy body and a tangy, crisp finish. It is complex and very balanced! This coffee is Fair Trade Certified and Certified Organic.
