In 1999 the Macias family founded the 33ha farm "La Ceja", of which 22ha are intended for coffee cultivation. The main focus is on the varieties Castillo, Colombia, F6 and Caturro. The family works closely with the "Coocentral" cooperative, where they regularly take part in cuppings in order to get the best out of their coffee and improve its quality over the long term. In general, there is a high exchange of knowledge and ideas within the cooperative with the aim of learning from each other. At the same time, the cooperative supports social programs in the region around Huila. Since 2005, USD 2.8 million has been spent on building houses, health care, good access to university (training) education and improving the infrastructure on the plantations, among other things. With the name Bomba de Fruta, Nordic Approach has launched a concept to offer naturals & fermented coffees from Colombia on the international market - with success, because the farmers usually focus on washed coffees, as they - especially regionally - have a represent a secure source of income. And in the truest sense of the word: this coffee is a fruit bomb! Aromas of rosehip, red berries and red wine result in a sweet, juicy and very balanced cup. The sweetness reminds us of wild honey. Our consumption recommendation We recommend preparing it as filter coffee with 15g to 250ml and slightly cooled water (96°C). The throughput time is between 2:25 and 2:40 minutes with the flattest possible bed. In the French Press we prefer a finer grind than usual (V60 02) so that the juicy body comes to the fore. If you want to prepare this filter coffee as an espresso, you should know what he:she is doing. We source it with a long pre-infusion and increasing pressure profile with a fine grind. We aim for a broth ratio of 1:2. If you don't miss the mouthfeel, you can also get it as a mild lungo. We would recommend a reference time of 27-30s (+PI). Higher temperatures help this complex, light coffee to extract properly.
