Finca Los Jazmines is a 10 hectare farm sitting at 1500 MASL in Palestina, Huila. Of the 10 hectares, Lizardo has planted 7 with coffee containing Pink Bourbon, Colombia, Castillo, and Gesha cultivars. This lot consists of 100% pink bourbon cherries that are selected, sorted, and floated to ensure only ripe and mature cherries make it into the final product. The coffee is depulped and immediately put in bags for a 76-hour anaerobic fermentation.Post fermentation, the coffee is washed and dried in a greenhouse for 18-20 days. The meticulous selection and preparation of this coffee results in one of the sweetest coffees from Huila we’ve tasted this year. Look for confectionery tasting notes with some fun fruity flavors from the Pink Bourbon variety and extended anaerobic fermentation.
